The Sugar Mascvo not refi ned, golden brown color is obtained by craftsmen after various stages of purified cation, evaporation and concentration of heating ed sugarcane juice. In contrast to the white and brown sugars which must be refi ned in industrial sweets, this artisanal process
has the enormous advantage of being locally eff ectué to the cooperative, and keep the value-added processing. There also remains much healthier for health, rich in caclium, iron, vitamins C, B1, B2, sodium, potassium and magnesium.
Full mascavo sugar is produced using agroecological techniques by farmers in the COPAVI (Victoria producteursagricoles Cooperative), a cooperative of collectivized Landless Movement, in the state of Parana in southern Brazil. Born in 1984, the Landless Movement (MST) struggle for agrarian reform and occupation of unexploited by farmers who lack land. Based on the slogan "the land belongs to the tiller", the MST organizes the occupation of land and the development of communities that settled there.
